Photo: Why the world’s best baristas are going on tour
Not just the judges
Champions on the road. Milk that takes on water from the wand
Champion baristas are going on tour. Bar takeovers. Tastings. A walk through the competition routine for people who never sat with the judges. Jack Simpson, 2025 World Barista Champion, is with FAEMA in Asia Pacific. On 14 September he is in Barcelona for a tasting and a live Q and A. Boram Um took the same road after 2023, across North America, Europe, and Asia. The events rarely turn a profit. The title still has to meet the room.
On Friday, September 11, 2026, we hold that room to one pressure: who still pours for the people who drink it when the milk is a bot, and when the crema is made after the shot.
The Global Coffee Awards named Sweet Bloom Coffee of Denver overall winner for the United States and Canada. Houston, 10 and 11 August. Double blind. Q graders. Barista Hustle weighed steamed milk at 55 C and found 7.5 to 10 percent extra water from the wand. Jack Simpson and Anthony Douglas concentrate milk instead. Automated foamers do not add that water. Ubermilk Plus can tap alternative milks. A later blind test of fake crema, a Nanofoamer on premade espresso, went 9 to 1 against the fake. The fake was more acrid. Asser Christensen unpacked a grinder in Denmark and brewed a coffee he knew. It tasted like nothing. Fruit gone. Danish tap. Filter coffee, he says, wants water between 30 and 100 TDS. The Breville Bambino Plus still pulls shots he likes, years on. A beginner machine.
A champion in a room that is not a stage. A wand that waters the milk. A cup that went quiet. The fourth wave is not the trophy. It is whether the pour still happens in front of the people who drink it.
